This summer salad is perfect for any BBQ. Guests will love the refreshing and tangy taste. Invited to a BBQ, this will go down well!
You could make this with strawberries or peaches instead of melon, or why not add them all? Add chia seeds or pine nuts for an extra crunch.
Serve with your choice of protein and add the extra mint leaves to some ice-cold water with a squeeze of lime!

Ingredients
1 watermelon
1 pack of feta
1 bunch of mint
1 bag mixed salad leaves
drizzle of balsamic vinegar
drizzle of extra virgin olive oil
pepper to season
Preparation
Step 1
Remove the skin from the watermelon and cut into bite sized pieces.
Step 2
Add the bag of mixed leaves to a large salad bowl. Add the watermelon and crumble the feta ontop.
Step 3
Remove the mint leaves from the stalks and sprinkle over the salad (add as many or as few as you like).
Step 4
Drizzle with oil, balsamic and black pepper before serving.
