About the Recipe

Perfect as a sharing dish for a dinner party, you could add feta cheese or burrata and some additional basil leaves and a drizzle of pesto.

You could add a source of protein to this dish and serve with pasta. Using wholemeal pasta will add extra fiber.

No fresh basil? Add some store cupboard dried herbs instead. Garlic paste is another quick alternative.

Have you found a lonely pepper in your fridge? Adding this will add more flavour and help you to reduce your food waste.

Ingredients

  • 1 Punnet of cherry tomatoes

  • 6 Cloves of garlic

  • 10 Basil leaves

  • Olive oil

  • Balsamic Glaze

Preparation

Step 1


Heat the oven to 180 fan.

Add the tomatoes, pealed garlic cloves and basil leaves to a small roasting dish.

Generously drizzle with extra virgin olive oil and season with salt and pepper.


Step 2


Roast for 25 minutes.


Step 3


Drizzle with balsamic glaze and serve as a side or on toasted wholemeal or seeded bread.
